At the moment, it's not possible to create fields with a set format or validation. You can add a description to the field to guide the user to fill in the field in a certain format.

We’d love to auto-fill default information into fields based on data (ie, Site x Level = certain Notice Period) which can then be edited if negotiated (or if someone’s tenure is long enough to change notice period amount). Is this possible?

Unfortunately, this functionality isn’t available in Bob at the moment. That said, the platform is constantly evolving and improving. I’d recommend keeping in touch with your CSM for updates on upcoming features, or checking out our Release Notes page where all new capabilities are published.
